Here's an in-depth interview with Ben Judd on the Bloodstained Community Podcast. They cover several topics, including Deep Silver's original involvement (the game is actually being published by 505 Games), as well as the fate of the Wii U version.
In short, Judd says it makes more business sense to switch it to the, um, Switch. However, IGA may still decide to commit to the Wii U version if he concludes that's what backers still want. But likely, it will not appear on both.
Ben Judd was also a guest on the podcast last year, and it was also very insightful. I'm surprised it didn't circulate among more mainstream news sites.

It's been received extremely well by fans to the point where they want to see her do a lot more of the artwork for the game. I can't disagree, altho I would feel a little bad for the game's current artist, Yuji Natsume.
