At Lake Hylia there's a guy who has a Bullet Bill on his shirt.

Havn't seen that one.
Im not sure about this one. There is a Goron in Hyrule castle Town that says "its a Secret to everyone". he only says it the first time you talk to him. He in in the building in the center of town, near the Cafe.

I noticed the Goron thing too. The time I noticed it was not the first time I'd spoken to him, though I think he does indeed say it only once. I suspect that to get that message, you have to talk to him after the third dungeon, and before some other event I haven't gotten to yet.
There's a more specific way to say that, but not without spoilers. I don't know if I'd even have noticed if I hadn't gotten a phone call at that exact second, and been staring at the screen during the call.

I have a feeling it's Zelda 2 related, but I haven't played further than the first dungeon or two in any earlier that LA.

I believe there's a Moblin in the original LoZ who says that.

Also, in the Fishing Hut on the Upper Zora River, there's a photo of the fisherman from OoT.

Damn. I was just coming here to post that. It's somewhat conspicuous, but it is an image of the actual character from OoT, rather than a new conceptualization of a similar character, which makes it weirder than just plain old continuity.

These are all excellent. I've seen the fishing guy, and I will be heading back to Lake Hylia later to find that Bullet Bill guy. Question: is it one of those crazy clowns?

The short, fat, depressed-looking guy in the middle of the lake, yeah.

I found some official art of him, and indeed he had Bullet Bill there as well. Confirmation is always a blessing I love that clown. There seems to be surprisingly few cameos in this game. It's almost as if they decided to reference Zelda history instead of throwing in cameos. Nintendo aren't usually so held back

I've heard some random murmurings about Miyamoto having said there's a secret yet to be discovered in Ocarina of Time. Know anything about that? Have the specific quote? Is it that Arwing thing? I would expect if that were the case, that there'd be a non-cheat way to get at it.

Shoot, I came here to report the OoT fisherman. *sigh* I've noticed quite a few salesmen (particularally the bird with the afro that sells lantern oil and red potion by the Forest Temple) saying "Buy something, will ya!", which is directly from the original LoZ.
Edit - I've found another potential. At the fishing pond, you can catch boots and empty cans. You could do the same in Animal Crossing.
