If Game & Watch is removed.....
Mr. Game & Watchs: Is...is that Mr. Game & Watch from Super Smash Brothers Melee? Looks like he's an assist trophy.
He's doing Judgement, what will happen?
The number determines what will happen. A giant Octopus could come, or tolls could fall.
Safe to say, low numbers are not as good as high numbers. Hmm.... I wonder what happens if he gets a 9 or 1. Guess you'll have to find out.

What trophy? The only trophy in Melee that even remotely resembled anything out of Stunt Race FX was the Monster car, and that was from 3D Hot Rally on the FDS.

According to the instruction manual for Stunt Race FX, the semi is known as 18-WHEELER.

Prince Sable or Prince Richard from For the Frog the Bell Tolls.
He could turn your opponents into frogs then he would slice and dice them and then turns into a frog himself before disappearing.

He could pin down one of your opponents and perform his signature move - the Piranha Bite!

Continuing on the WarioWare list I started earlier:
Kat & Ana: These two act similar to Lyn, except one executes a super-fast slashing maneuver that stuns an enemy, while the other unleashes a barrage of throwing stars while your opponent is recovering.
Ashley & Red: Random status effects! Not all are necessarily beneficial though; Ashley will use Red (in wand form) to cause a random person on the board to become Super, Mini, Bunny Hood, Metal, Invisible, Lip's Flower, etc. etc.
9-Volt & 18-Volt: Clefairy and Togepi used Metronome in SSB/M; 9-Volt and 18-Volt use a similar method to attack. The difference is that the pair will use a random assortment of Nintendo Cameo moves; causing a rain of tools from the Helmet Game & Watch (like in Flat Zone), creating a shied of rotating Green Shells around your body, giving your basic attacks a projectile beam at 0% health...so on and so forth.
Dribble & Spitz: They appear in their taxi and start to careen out of control on the course's base level, damaging any unfriendlies to come in contact with it.
Young Cricket & Master Mantis: Nothing too interesting. They unleash a lot of martial arts moves. Booo, boring.

Some version of the Starmen from EarthBound should appear and use PSI Starstorm (not sure if there's a more adequate move for them in Mother 3, though).
