Hmm. I'm curious about this: is normal Mario hidden when playing as 8-bit Mario?

No, Mario is behind 8-Bit Mario. Once you enter the room again, 8-Bit Mario is still in the corner even after the trick is done.

I expect 8-bit Mario is there as an object to trigger the event. So touching him would cause you to become him. Is there still an 8-bit Mario behind the curtain when the player's controlling him?

Yes but either way is a object event for normal Mario. The game's main CPU also freezes for a second so you know automatically that banks are switched but what I don't know is the value otherwise I would have made a PAR code to let you play as 8-Bit Mario everywhere.
