I don't recall if this has been brought up before, but it kinda dropped into my head earlier and thought I'd put it here for everyone to comment.
In SMB3, Mario does a somersault when he's invincible. Could this be a reference to Samus's Screw Attack from Metroid? She somersaults through the air, making her invincible while doing so.
It seems like it could be an out-there reference...

Well, possibly. I can't say I completely agree, but it does sound likely.
It's kind of un-referenced in the remake (SMA4), where Mario or Luigi does the somersault when clearing a World-e/e+ level (even when small). While they technically don't touch any enemy in that move, it kind of unlinks the move with invincibility...
But whether that's intended to be a Metroid reference in the original, I'm not sure. I'd say yes from the sprite appeareance, but at the same time,
if (invincible && !small) showSpinAnimation();
and
if (screwAttack.obtained) makeInvincible();
are completely reverse sets of logic. I'd still say the "yes it's a reference" factors stand out more, though.

Could be, but I'd say no. I think they just made him do the acrobatics for the sake of coolness.

With a Zelda cameo being it's very own item it might very well be. Still I'm going with unintended, but very similar in retrospect.
Speaking of somersaults, maybe that's where they got the 120-star sparklesault idea from for SM64. Maybe? No? Ok

Eh, the first time I jumped with a star, my reaction was "hey, that's just like a Screw Attack", but it always seemed more like a coincidence than something intentional.

It's not a reference. Mario kills enemies for having the star power, not for somersaulting, which is the opposite of how the Screw Attack works.
Several game characters "somersault" when jumping such as Ryu from Ninja Gaiden and Bill from Contra.
Like darkirby said, they just made him do that for the sake of coolness.

I'm not saying it's an absolute reference, but why make Mario somersault when invincible? Just because it's cool? Possibly. It's a possibility that making Mario somersault when jumping while invincible is there just because it's cool. However, Samus being able to do an invincible somersault jump was also cool. On top of this, Metroid was brand new at the time. I know it's not a perfect match. Mario getting the Starman predated Metroid, and it works in its own way. Then they changed the jump animation for some reason. I'm suggesting that reason is a little throwback to Metroid. Not a direct obvious lift from the Screw Attack, but a little nod to it. And I thought I was harsh on judging what is and isn't a cameo

The best thing ever was when you jumped down a high platform as Raccoon Mario, invincible, and fell slowly by pressing A while the Starman effect wore off. You'd see a non-invincible Mario doing a somersault capable of changing its direction.

I still think you're reaching.
In Mario 3DS Land you also do a somersault when invincible. I really don't believe it was a nod to anything, but just something that looked cool.
I've never seen Mario games referencing other games made by totally different dev teams back then. I'm not counting the Gameboy ones because those weren't made by Miyamoto's team (R&D1 I believe?).
