One of the horses from the first derby (not yet sure if it appears later) has a name that references Pikachu.

Another horse is called Bullet Seed, like the Grass-type Pokémon move: A nod to the old slogan of the Pokémon franchise:

Started playing the demo, I think I saw a horse called Spinning Driller. A possible Drill Dozer reference?

Didn't play that game much, but I guess it doesn't count unless there was an item called that (don't all drills spin?). But speaking of stretches, here's something curious: Poké Ball-colored (upside down) capsules that contain puzzle pieces.

Individually, these may seem too vague to be certain references, but we have both: Gold Heart and Silver Soul referencing the titles of the Pokémon Gold and Silver remakes. And, if Pikapika Mouse is taken as a reference to Pikachu, then Cannon Turtle is to Blastoise: "Bulba Soarer" is a play on Bulbasaur.

Another horse is named "Smart Ball", like the North American name of the 1991-1992 SNES game developed by Game Freak. And here's Mocket Ponster. Also, Volt Tackle, Pikachu's signature move (which if you know your Game Freak history, comes from even earlier).

Took me a while to realize this one: Harmoniter sounds like "HarmoKnight"-er, another Game Freak eShop title.
