To elaborate (due to character limit on title) this is in context of officially by Nintendo.
With Star Fox 2 (SNES Mini), the English version of Mother (marketed as "EarthBound Beginnings") (Wii U), European Drill Dozer (Wii U), the Japanese version of Advance Wars: Days of Ruin (Nintendo 3DS eShop, Club Nintendo Japan) this is not unheard of. From order of how I feel:
1. That Hanasaki Kassen game (cancelled Game Boy Advance game?). Although lost to time, maybe Nintendo could make an agreement with Blue Planet Software to license it or share ownership. This game was an annealing (is this related to evolution? I'm not very knowledgeable about that field) simulation game. From the title, perhaps regarding flowers and some form of competition. It was cancelled for being very hard to develop (something Intelligent Systems may be able to assist) due to all the variables that would have to be considered. The past few years have been influential for machine learning, so it could be easier to develop now (maybe for Nintendo Switch; I wouldn't mind what graphics it has but I'd also welcome an improvement over Game Boy Advance).
2. Sound Fantasy (cancelled SNES game, leaked online). It's unfortunate this was not on SNES Mini, but would love to see this officially as I'm against ever handling prototypes/games I don't own (though I emulate games I have physically or digitally through official/second-hand purchase in faith that they are not stolen even though I have to use an illegal copy for research with data-mining/emulation [which makes me feel awkward talking about]).
3. Dragon Hopper (cancelled Virtual Boy game) - I would love this so much! (for instance a reboot/improved graphics version or just the original). Intelligent Systems made it so licensing may not be an issue here.
4. Bound High! (cancelled Virtual Boy game, leaked) - Similar to the above Dragon Hopper, but licensing here may be more of an issue. Japan System Supply owned the rights to the Chalvo franchise (and would still do after the non-Nintendo published Chalvo 55) technically, and this company would become defunct (according to the GDRI community).
5. Project HAMMER - Not my kind of game, but it would still be very interesting to see it revived.
6. Cosmic Walker (Wii) - I love space, and this could be a nice casual real-world space inspired simulator like the sea exploration themed Endless Ocean. There could be challenges too (e.g. fixing satellites, space junk). Nintendo would perhaps have to make another agreement with Gaia for this to work. As Nintendo have been friends with their partner Atlus recently (i.e. Persona in Smash) maybe it's not out of the question??
Thoughts? Which cancelled games would you love to see rebooted or officially released?

There are a lot of unused concepts in Mario that sound way better than the final games (more realistic-looking textures in New SMB, an actual 4-player mode in SM64DS, several concept art in Odyssey), but as far as truly unreleased games, I can only think of very few. It's not easy to find examples of unreleased Nintendo games to begin with, especially in the last 10 years when they were much more careful about what to announce, and not "hey look new Kirby on GameCube oh never mind you're gonna wait another 7 years".
This one is not really an unreleased game: Virtual Boy Mario Land. Most of the game remained unreleased, but the minigame part was salvaged and released as Mario Clash. The main game seems to be a mix of standard Mario platforming (together with large sprites and the resulting screen crunch typical of Virtual Boy games) and top-down portions. Kind of like the inverse of Link's Awakening and Four Swords Adventures, where the top-down viewis the main mode with side view in some parts.
There are a few unrealised Kirby concepts (and I'm not talking about the series of experiments that eventually led to Kirby's Return to Dream Land), but I'm the most interested in Kirby Tilt'n'Tumble 2. I didn't think it would actually work well with the original setup (just think about how easy is it to accidentally disconnect a GBA Cable), but it should work on a newer system where gyro sensor is part of the standard controller.
I'm not as much interested in the unused concept for a Fire Emblem game on Wii (never officially announced). From the way that game is described, it's going to feel even less like a traditional Fire Emblem game than Echoes and Three Houses combined.
There's also Metroid Dread, which is also never officially announced. I don't know anything about that besides it being a sequel to Metroid Fusion, but that's more than enough. I've been wanting to see a sequel to Metroid Fusion since… well, Metroid Fusion.

In terms of "finished, but unreleased" games, I usually think of Nintendo Pennant Chase Baseball on the GameCube for some reason. Not that I'm necssarily interested in playing it, but it's kind of interesting in that it was the last licensed Nintendo sports game, and never got transferred to the Wii like other late, unreleased GameCube games. But being that it was licensed (with MLB and MLBPA), it will likely never see the light of day. I'm not as much interested in the unused concept for a Fire Emblem game on Wii (never officially announced). From the way that game is described, it's going to feel even less like a traditional Fire Emblem game than Echoes and Three Houses combined. Interesting replies! I relate with a lot of these points.
When I think of Wii Fire Emblem, I think of the cancelled Nintendo 64 Fire Emblem (maybe the transition into 3D brings subtle challenges like that; such as how the game would work, development time creating models [where some creative freedom in 2D graphics are lost]. I wonder whether EarthBound 64 was in a similar boat. Additionally, although communication was a major thing to consider in this case, 3D Pokémon games and a rumoured 3D Pokémon RPG before Colosseum existed; according to a magazine I forgot would involve a character called Leo; curiously is now the Japanese default name for protagonist Wes from Colosseum). It's also curious, some of the 3D Nintendo 64DD games had darker aesthetics(?) unless this is a conception of my imagination. Game Freak originally viewed Pokémon in handheld related considerations/conceptions).
One of the staff of Nintendo 64 Fire Emblem game, Shouzou Kaga, would develop for Tear Ring Saga, according to observation of the game (maybe supported by official accounts too?) people feel was a manifestation of rebellion; in really wanting a game like 3D Fire Emblem, leading to legal trouble. I wonder whether the reception from Nintendo would be more permissive nowadays, because (though it's not everyone's thing and there is a stigma) some people like more closely inspired/borrowed from one point of view/stolen from another games. (maybe we could start a thread related to that as well)

I don't think the Nintendo 64 Fire Emblem was going to be a 3D game (I'm not entirely sure). Lots of changes occurred in that game, but it eventually ended up as Binding Blade for the most part.
Kaga pretty much departed before Thracia 776 came out. I don't know what exactly happened behind the curtain, including who initiated the split, but I'd have kicked him out too. He's like a passionate artist who insists on a lot of things, so having him would lead to creative, acclaimed, but not very marketable games. I'd even argue that him leaving IS was the best thing that has happened to Fire Emblem.
Two things Kaga did back then would have prompted a lawsuit anyway, regardless of how the law and courts forced Nintendo to be more permissive these days. Kaga (1) actually named the game Emblem Saga at first and implied actual connections in the lore, and (2) used terms like Manakete and Pegasus Knight (the final version of TRS changed the former), both registered trademarks of IS.

Oh OK, sorry about my inaccuracy in the last post. (re:Kaga): I see. I respect that, some developers can (come across or be) a little too dominating - sometimes this 'archetype' is in my own shadow, my compulsive posting and really long posts. (it may be embarrassing in a company too; because we want everyone to have an equal say but it's unfortunate the development went like this (re:Kaga). I think that may be a reason I don't want to join an game/art industry for that reason 'too many chefs in kitchen' also bad experience of university climate I wasn't too used to, I just do gardening - if someone left a game/art/character development etc. team it would play on my mind forever.
Oh, I didn't aware they were that close (implying they were directly connected). Mm.. imitation (may) be OK, but actual connection a step too far. I agree that's wrong.
Also I'm trying to find more information about that alleged Pokémon game and anything reporting the "Leo" character in the Pokémon game (but there may be confusion with an unrelated game, Jungle Emperor Leo). Some referred to it as Pocket Monsters RPG, but people would mix up details with the development history of Stadium (and "Pocket Monsters 64" would be an ambiguous name). Bulbapedia had an article after a few enthusiasts on the forums (in which it was also found there was a game called "Pokémon X" as a codename before Crystal; Occam's razor leads us to think it was Crystal but it's unconfirmed, but adding to the confusion, apparently before the official release of Crystal people the publishers called Crystal that on the official Japanese mini-site), but it was deleted in relation to lack of source.
