While everyone is getting worked up on fighter selection, I'm actually more annoyed by the stage picks in Smash Ultimate.
Long story short, I don't like how the stage selection for some of the series are leaning towards the older games, and I especially don't like how this is the result of a lot of Smash Wii U stages not making it in Ultimate.
The particular offenders:
With the exception of Star Fox (Corneria got a Zero makeover, and a search in Smash Wiki showed that, surprisingly, Lylat Cruise took inspiration from Assault), all of these series fail to cover the newer games. And except for Kirby, all happened because the Smash Ultimate development team had the wisdom to not make the newest stages return. Yeah yeah, 8-Player Smash and stage transformation, but if you ask me, I'd want to see them just re-introduce the 4-player limit for these stages, and similarly disable them if stage transformation is enabled in the rules.
Or just give them new stages, like they did with New Donk City Hall and Great Plateau Tower.
But given that the Smash team are currently focused on the Challenger Packs, I don't think they'll ever address this, and I don't think we're getting Challenger Packs based on these series either. Maybe except Metroid for Metroid Prime 4? Not that I'm counting on it.
So we're stuck with the older, less interactive stages. (I actually do like gimmicky stages. People complain about having to battle the stages rather than the opponents, but I see that as a survival competition.)

The particular offenders:
Series | Coverage (Smash) | Coverage up to (original games) | Remarks |
Yoshi | 64 to Brawl | Yoshi's Story | Woolly World in Wii U did not return |
Donkey Kong | 64 to Melee (not counting 75m) | Rare-era DK | Rumble Falls in Brawl and Jungle Hijinxs in Wii U did not return |
Star Fox | Melee to Brawl | Star Fox Zero (aesthetically) | Orbital Gate Assault in Wii U did not return |
Metroid | Melee to Brawl | Metroid Prime | Pyrosphere in Wii U did not return |
Kirby | 64 to Wii U | Kirby Super Star Ultra | All stages return, they just all reference old games |
