First off

Switch Console (neon version) and also the Animal Crossing version (if you have it). Interacting with it make it do the Switch start up noise (1:08)

Totaka's Song and KK Song are in the game. It's unclear what the conditions for Totaka's Song are, with some claiming its random. (0:48)

But the one that inspired me to make this thread is from Gulliver

It only took 30 years but it finally happened an actual reference!

If you refuse to help Gulliver, he will comment that he hasn't encounted an icy shoulder since encountering the Snomad fleet (baddies from DK: Tropical Freeze)

I've got a few screenshots taken.

Sailor Gullivar can reference StarTropics' Coracola Island, as shown in the OP, when you give him his communicator parts.

He can also reference the Snowmad Fleet if you try and decline his offer of help.

Pirate Gulliver can reference Captain Syrup when you agree to help him.

And he can say this if you decline. Is it a Metroid reference? Probably, given how many other allusions he has.

When you catch a squid by fishing, there are three things the Villager can say referencing Splatoon. I screen captured 2 of 'em. Thought I had the other, but I'll get it when they go in season again.
