Moar(Don't looma ny ffurther, major spoilers)
In the Toy Time Galaxy, you can see an 8-bit Mario in the background
In any beach galaxy, collecting music notes will play the Underwater theme from SMB
Many galaxies will play the underground theme when you collect music notes.
Sweet Sweet Galaxy plays a remake of a SMB3 tune. Specifically, the one that usually plays on moving levels
Not sure if this counts, but you first meat Luigi in a Mansion. The Haunted Galaxy. At the very least, just cool.
The first two Bowser levels (in the fountain and bedroom) will play a remake of the Bowser level music from Mario 64

May or may not be right here, so I'll throw it out anyway... is the red and white rocketship in Fountain: Space Junk Galaxy from Pikmin? It looks really familiar to me...

In the Space Junk galaxy, if you feed the Hungry Luma, it will transform into a Yoshi head planet.
I was also curious about the ship on Space Junk island that bears a strong resemblence to Olimar's in Pikmin...don't have a screen on hand, alas.
In the Buoy Base Galaxy, the big orb at the top is quite similar to a Pokeball from Pokemon.

If it is one, it's the ship from Pikmin two -Another one of those music notes. In Deep Dark Galaxy, accessing a pipe on the top of the rocky mass and the note stream inside play the Music from SMW: Dinosaur Island 1 -Toy Time's Purple Coin challenge is collecting 100coins on an 8bit Luigi. On that note, you do go one the 8-bit Mario in Toy Time. It's actually for the second star. -Not sure if this is a cameo. The Mailtoad will give you a letter from Peach telling you she doesn't know where she is, but is OK becuase Mario is coming to save here. It also has 5-ups she gave as a gift. This is a reference to SMB3, but may be contunilation(or what ever you call it). Also, with a lot of the music ones, they are in many levels. Also, Toy Time's music is a remake of SMB overworld music.

Most of these are in-series continuity, to be honest. The only ones I figured count as cameos would be any references to 8-bit Mario or the music-note challenges (I've had underground SMB, underwater SMB and Super Mario World themes so far!).
It's great that it's filled with music and enemies from older games, but that doesn't make 'em cameos... just long overdue in-series returns.
The Yoshi head MAY count, only because Yoshi doesn't actually appear in the game.

The Olimar Ship in the Space Junk Galaxy is a cameo. It also has two cockpits.

I admit, the rocket ship is a decent enough cameo to be counted. Pikmin 2 cameo, no less! Aww man... I need to play THAT again

Only the shapes vaguely resemble the consoles - and you have to remember that the NES and SNES you showed are the US designs, and not the original Japanese designs that look nothing like them.
I suspect they're just shapes.

How does no one get that enemies like Magikoopas and Doomships are NOT cameos? It's continuity, Bowser finally took them for spin and sent out his wizards and a Magikoopa lucky enough to get to knock Mario off which is a good hint it's meant to be Kamek. But not a cameo still. Kamek's shared with the Yoshi and Mario games so yeah.
Olimar's ship's the one reference in there.
...I don't even want to go into the purple NES thing.

I know I had a good reference to share, but it escapes me now. So in lieu of that, some beta info:
--Rosalina was meant to be a relative of Peach, hence the resemblance. They got rid of it in the final game, but you could sort of imply it if you want to from her backstory.
Also, the Bowser music sounds sort of like Pirates of the Caribbean XD

I did imply that she was Peach's relative, even though it was never implicitly stated.
Also, I don't think the Magikoopa at the beginning was anything other than a standard Magikoopa. But them I'm starting to think YI Kamek was given more status in the US than in Japan, having being given the Japanese name for "Magikoopas" as his own name.
